Clean Breakfast Recipes

APPLE CINNAMON OATMEAL
(2 servings)

2 packets plain oatmeal
1/2 c. finely chopped Granny Smith apple
2 Tbsp. chopped walnuts
2 tsp. ground cinnamon
Hot water

--Combine ingredients and cook in microwave according to directions on oatmeal package.

(Calories: 182/ Protein: 6.5g/ Carbs: 27g/ Total Fat: 6g/ Fiber: 4.5g)


GREEN PEPPERS AND TURKEY BACON SCRAMBLE
(1 serving)

1 whole egg plus 2 egg whites
3 slices of turkey bacon (cut in thin strips)
1/2 bell pepper, chopped
1 oz. pepper jack cheese, shredded
2 scallions, chopped
salt & pepper to taste
nonstick cooking spray

--Scramble eggs in a bowl. Add turkey bacon, bell pepper, scallions, and cheese. Add dash each of salt and pepper (optional). Spray microwavable bowl with nonstick spray and pour in egg mixture. Microwave on medium for 3 minutes.

Picante Frittata

This is an Italian omlete, which is so easy to make and delicious!

1 tsp on extra-virgin olive oil
1 Ciollino onion..(I use green onions!)
1/2 red bell pepper, cut into thin ribbons (chopped green pepper is good too)
1 cup chopped baby spinach leaves
3 egg whites + 1 whole egg
1/4 cup skim milk
1/4 tsp sea salt
Pinch cumin
1/4 tsp ground pepper
1/2 cup salsa (optional)

--preheat oven to 350 degrees F.
--In medium ovenproof skillet, heat olive oil over medium heat..add veggies and cook until soft (approx. 5 min)
--While veggies are cooking..combine eggs, milk, salt, cumin and pepper.
--Pour egg mixture over cooking veggies..cook until edges are set and center is just beginning to set.
--Transfer to heated oven and bake another 5-8 minutes..or until center is firm.
--Serve with salsa! (optional)


Ultimate Smoothie

This is super easy as well..and would have NEVER thought of mixing these ingredients together..but I LOVED it!

1 cup ice
1 cup skim, soy, rice, or almond milk
1/4 cup cottege cheese
1/2 cup strawberries, sliced
1 kiwi, peeled and cut into chuncks
1/2 cup chilled green tea

--Mix it all together in a blender..and it's a perfect homemade protein shake! =)

Scrambled Tofu w/ Spinach & Tomato

I love eggs..and I've been experimenting with tofu..so this recipe will be perfect for me!

1 lb firm tofu (unflavored)
3 Tbsp coconut butter or olive oil
3 shallots, peeled and chopped
1 clove garlic, passed through garlic press
1 small firm zucchini, finely chopped
4 plum tomatoes, chopped and drained
1 tsp ground cumin
4 cups spinach leaves, chopped
1/2 tsp sea salt
Ground pepper, to taste.

--Press tofu
--Remove tofu from it's press and break it up with your CLEAN fingers. The pieces should look like scrambled eggs. Set aside.
--In a medium skillet heat 1 Tbsp coconut butter/olive oil and add shallots
--Add garlic, zucchini and tomatoes...cook until soft..remove from heat.
--In another skillet, heat cumin over medium heat..add remaining butter/oil and allow it to heat up a little.
--Add crumbled tofu and cook through for several minutes..add veggie mix and chopped spinach. Heat through, stirring frequently.
--salt and pepper to taste.
